Ingredients
1/2 cup vermicelli (thin noodles)
1 liter full-fat milk
1/2 cup sugar (adjust to taste)
2 tablespoons ghee (clarified butter)
1/4 cup mixed dry fruits (almonds, cashews, pistachios, raisins)
1/4 teaspoon cardamom powder
A pinch of saffron strands (optional)
2 tablespoons rose water
1 tablespoon chopped dates
1 tablespoon chopped dried figs
Directions
- Heat ghee in a pan and add the vermicelli. Roast until it turns golden brown. Remove from heat and set aside.
- In the same pan, add the mixed dry fruits and roast them lightly. Remove from heat and set aside.
- In a large saucepan, bring the milk to a boil. Stir occasionally to prevent it from sticking to the bottom.
- Once the milk comes to a boil, add the roasted vermicelli and sugar. Stir well and let it simmer on low heat until the vermicelli is cooked and the milk thickens slightly.
- Add the roasted dry fruits, chopped dates, chopped dried figs, cardamom powder, and saffron strands (if using). Mix well and let it simmer for a few more minutes.
- Finally, add the rose water and give it a gentle stir. Turn off the heat and let the Sheer Khurma cool down slightly before serving.
- Sheer Khurma can be served warm or chilled, according to your preference. Garnish with additional dry fruits before serving if desired.
- Serve this delicious and creamy Sheer Khurma as a delightful dessert during festive occasions or special gatherings.
